3 eggs                                         2 cups sugar

1 cup oil                                      2 cups flour

2 teaspoons cinnamon             1 teaspoon baking soda

½ teaspoon salt                         1 teaspoon vanilla

1 cup walnuts or pecans

4 cups red apples sliced thin (about 5 apples) 

• Fold in nuts. (batter will be thick)

• Spread apples on the bottom of a 9 x 13 dish. (Grease or butter bottom of dish if preferred)

• Pour batter over apples. Let stand for 10 minutes or so while thick batter works down into apples evenly.

• Bake @ 350° for 40 minutes

• Cool for at least 1 hour before spreading icing.

6 oz. package of cream cheese                 ¼ cup melted butter

2 cups powdered sugar                             1 teaspoon lemon juice

• Beat softened cream cheese until fluffy. Beat in melted butter then the powdered sugar. Add lemon juice.

• Spread over cooled cake and refrigerate.
